The Salad I Can’t Stop Eating

I wish I knew which creator originally posted this salad so I could give her the credit but try as I might, I cannot seem to find the original post. I was casually scrolling TikTok one day when I came across this babe fitness model talking about her favorite snack. It’s fairly simple, mini sweet peppers, cucumbers, and ginger dressing. Easy enough I thought and off I went to the store to grab my ingredients. I have made probably a thousand versions of this salad using different proteins, dressings, and crunches to get to this point: my tried and true, love of my life salad that never disappoints.

Below is the recipe and please let me know if you are obsessed love it as much as I do.

INGREDIENTS:

Chicken Breast

Sweet Mini Peppers

Makoto Ginger Dressing

Momofuku Chili Crunch Sauce

Trader Joe’s EBTB Seasoning

Optional: Cucumbers (I’m not super into them)

I like to season the chicken breast with salt and pepper and bake for 30 min. at 350 degrees.

Chop the peppers and chicken and add to a bowl. Pour on the ginger dressing and spoon in the chili crunch, sprinkle with the EBTB seasoning and voila! If I could drink it, I would.
